    Ingredients

    • ½ cup grape tomatoes
    • ⅓ seedless cucumber
    • ½ cup sliced mini sweet peppers
    • 8 oz fully cooked sea salt & black pepper chicken
    • 1 (5-oz) container spring mix blend
    • ½ cup shredded carrots
    • ¼ cup crumbled blue cheese
    • ¼ cup Caesar dressing
    • ¼ cup honey-glazed pecan pieces

    Steps

    1. Tossed Method
      1. Slice tomatoes in half. Peel and slice cucumber into half-moons. Cut chicken into bite-size pieces, if desired.
      2. Add spring mix and remaining ingredients to large mixing bowl; toss to coat and divide evenly between 2 bowls.
      Compartmentalized Method
    2. Evenly divide spring mix into 2 salad bowls. Halve tomatoes; peel and slice cucumber into half-moons. Cut chicken into bite-size pieces.
    3. Layer remaining ingredients on top, in this order: tomatoes, cucumber, sweet peppers, chicken, carrots, blue cheese, and pecan pieces; top with dressing. Serve.
