Ingredients
- ½ cup grape tomatoes
- ⅓ seedless cucumber
- ½ cup sliced mini sweet peppers
- 8 oz fully cooked sea salt & black pepper chicken
- 1 (5-oz) container spring mix blend
- ½ cup shredded carrots
- ¼ cup crumbled blue cheese
- ¼ cup Caesar dressing
- ¼ cup honey-glazed pecan pieces
Steps

- Slice tomatoes in half. Peel and slice cucumber into half-moons. Cut chicken into bite-size pieces, if desired.
- Add spring mix and remaining ingredients to large mixing bowl; toss to coat and divide evenly between 2 bowls.
- Evenly divide spring mix into 2 salad bowls. Halve tomatoes; peel and slice cucumber into half-moons. Cut chicken into bite-size pieces.
- Layer remaining ingredients on top, in this order: tomatoes, cucumber, sweet peppers, chicken, carrots, blue cheese, and pecan pieces; top with dressing. Serve.
