Ingredients
- 2 GreenWise boneless, skinless chicken breasts (about 1 lb)
- Large zip-top bag
- 3 tablespoons Caesar dressing, divided
- 2 cups baby romaine salad blend
- 4 Bakery French hamburger buns
- 4 slices provolone cheese
Steps
- Preheat grill (or grill pan) on medium-high. Place chicken in zip-top bag (wash hands), seal bag tightly and pound with mallet to ¼-inch thickness. Remove from bag and slice each breast in half.
- Coat chicken with 1 tablespoon dressing; grill 4–5 minutes on each side until chicken is 165°F. Toss romaine with remaining 2 tablespoons dressing. Slice buns in half.
- Place chicken on bottom halves of buns; top with cheese and salad.
Other Preparation Methods
- Stovetop: Preheat large sauté pan on medium-high. Cut 1 lb chicken breasts into small pieces; toss with 1 tablespoon each oil and chili powder. Cook chicken 3–4 minutes and until 165°F. Stir in 15 oz drained pinto beans and 1 cup salsa. Top 4 cups tortilla chips with 4 oz Mexican-blend cheese; pour chicken mixture over chips.
- Bake: Preheat oven to 425°F. Cut 2 chicken breasts in half. Toss chicken with ¼ cup Italian dressing and 1 pint grape tomatoes. Bake 10–12 minutes and until 165°F.
