Green Bean Casserole with Crispy Onions

Ingredients

  • 1 ½ lb trimmed fresh green beans
  • 3 tablespoons unsalted butter
  • 8 oz sliced fresh white mushrooms
  • ½ teaspoon kosher salt
  • ¼ teaspoon freshly ground black pepper
  • 2 cloves garlic
  • 3 tablespoons all-purpose flour
  • 1 cup reduced-sodium vegetable (or chicken) stock
  • ½ cup heavy whipping cream
  • 2 cups crispy fried onions

Steps

    1. Preheat oven to 400°F. Bring medium saucepan of lightly salted water to a boil for beans. Halve green beans, then cook 3 minutes, drain, and set aside.
    2. Melt butter in 12-inch cast iron skillet on medium-high. Add mushrooms, salt, and pepper; cook and stir 3–5 minutes until liquid is released. Stir in garlic; cook and stir 1 more minute. Add flour and stir until mushrooms are coated.
    3. Add stock ¼ cup at a time, stirring continuously; simmer 1 minute. Stir in heavy cream and return to a simmer; cook 5–6 minutes, stirring frequently, until sauce thickens.
    4. Stir green beans into sauce until evenly coated; sprinkle fried onions over top. Bake 15 minutes or until sauce is bubbling and onions are a shade darker. Serve.
