Greek-Style Turkey and Rice On-the-Go Mugs

Ingredients

  • 1 (9.6 oz) package cooked turkey sausage crumbles
  • 2 cups cooked brown rice
  • 4 cups fresh baby spinach
  • ¼ cup julienne-cut, sun-dried tomatoes
  • ⅓ cup sliced Kalamata olives
  • 1 lemon, for juice
  • ½ cup reduced-sodium chicken broth
  • 2 teaspoons dried oregano
  • 2 tablespoons lightly dried parsley
  • 1 tablespoon garlic stir-in paste
  • 3 oz crumbled reduced-fat feta cheese

Steps

    1. Combine sausage crumbles, rice, spinach, tomatoes, and olives. Divide among 6 (12 oz) microwave-safe mugs (mugs will be full).
    2. Juice lemon (2 tablespoons). Combine lemon juice, broth, oregano, parsley, and garlic paste; whisk to blend. Divide mixture evenly among mugs, then top evenly with cheese.
    3. Microwave each mug on HIGH 1-2 minutes, stirring halfway through cook time, until mixture is 165°F. (Caution: Mugs will be hot; touch only by handles.) Stir carefully and serve.
    Chef's Tip: Cover and chill remaining mugs for future meals. Add 1 beaten egg per mug and microwave 1 additional minute for breakfast on the go or wrap mixture in flour tortillas or lettuce cups for a handheld meal.
