Ingredients
- 1 (9.6 oz) package cooked turkey sausage crumbles
- 2 cups cooked brown rice
- 4 cups fresh baby spinach
- ¼ cup julienne-cut, sun-dried tomatoes
- ⅓ cup sliced Kalamata olives
- 1 lemon, for juice
- ½ cup reduced-sodium chicken broth
- 2 teaspoons dried oregano
- 2 tablespoons lightly dried parsley
- 1 tablespoon garlic stir-in paste
- 3 oz crumbled reduced-fat feta cheese
Steps
- Combine sausage crumbles, rice, spinach, tomatoes, and olives. Divide among 6 (12 oz) microwave-safe mugs (mugs will be full).
- Juice lemon (2 tablespoons). Combine lemon juice, broth, oregano, parsley, and garlic paste; whisk to blend. Divide mixture evenly among mugs, then top evenly with cheese.
- Microwave each mug on HIGH 1-2 minutes, stirring halfway through cook time, until mixture is 165°F. (Caution: Mugs will be hot; touch only by handles.) Stir carefully and serve.
