Grapefruit, Ginger, and Rosemary Soda

Ingredients
  • 2-inch piece fresh ginger
  • 2 large red grapefruit, for zest/juice
  • ¼ cup sugar substitute
  • ¼ cup water
  • 2 ½ sprigs fresh rosemary, divided
  • 1 drop red food coloring gel (optional)
  • 4 cups crushed ice
  • 12 oz chilled citrus sparkling water
Steps
  1. Cut ginger into thin slices. Zest grapefruit (2 teaspoons), then juice (2 cups). Place ginger, grapefruit zest and juice, sugar substitute, water, and 2 sprigs rosemary in medium saucepan. Bring to a boil, then reduce heat to medium-low and simmer 3–4 minutes until sugar substitute dissolves and liquid reduces by one-half.
  2. Remove pan from heat. Let stand 5 minutes to steep, then strain syrup though fine-mesh strainer (discard solids); stir in red food gel, if using, and let stand to cool.
  3. Divide ice among 4 tall glasses; top with syrup and sparkling water. Garnish with leaves from remaining ½ rosemary sprig. Serve.
