Gooey Peanut Pie

Ingredients

  • 6 tablespoons unsalted butter
  • 1 ½ cups salted, roasted (or honey roasted) peanuts
  • Large zip-top bag
  • ¾ cup light corn syrup
  • ¾ cup brown sugar
  • 3 large eggs
  • 1 tablespoon vanilla extract
  • ½ teaspoon kosher salt
  • 1 frozen deep dish piecrust (or refrigerated rolled piecrust)
  • Whipped topping (for serving)

Steps

    1. Preheat oven to 350°F. Melt butter. Place peanuts in bag and crush coarsely with rolling pin or meat mallet. Whisk corn syrup, sugar, eggs, butter, vanilla, and salt in large bowl until fully combined. Stir in peanuts.
    2. Place pie pan on baking sheet. Pour filling into piecrust; bake 50–60 minutes until filling is puffed and 160°F, but center still jiggles slightly. Transfer pie to wire rack and let cool completely about 4 hours (or overnight). Serve with whipped topping, if using.
