Gingerbread Waffles with Sautéed Pears

Ingredients

  • 3 medium, ripe pears
  • 8 tablespoons unsalted butter, divided
  • 1 tablespoon sugar
  • 3 cups dry Belgian waffle mix*
  • 1 ⅓ cups water
  • 2 large eggs (or ½ cup egg substitute)
  • 2 teaspoons ground cinnamon, divided
  • 1 ½ teaspoons ground ginger
  • 2 tablespoons molasses
  • Cooking spray
  • ½ cup vanilla low-fat Greek yogurt, divided

Steps

    1. Preheat Belgian waffle iron on medium. Halve pears, remove cores, and slice thinly. Place 2 tablespoons butter in large sauté pan on medium. Add pears and cook 5–6 minutes, stirring occasionally, until softened. Sprinkle pears with sugar; cook 2–3 more minutes until tender and browned. Set aside and cover to keep warm.
    2. Melt remaining 6 tablespoons butter; place in medium bowl. Stir in waffle mix, water, eggs, 1 ½ teaspoons cinnamon, ginger, and molasses until smooth. Let batter stand 2 minutes. Coat waffle iron with spray. Pour about ⅔ cup batter into iron; cook 3–4 minutes (or following manufacturer's directions) until browned and steaming. Repeat with remaining batter.
    3. Top each waffle with pears and 1 tablespoon yogurt; sprinkle with cinnamon. Serve.

    *NOTE: Some waffle mixes may require different measurements of liquid ingredients; adjust as needed.
