Ginger-Lime Wine Coolers

Ingredients

  • 1 (8-inch) piece fresh ginger
  • 2 limes, for zest/juice/wedge
  • 1 ½ cups sugar
  • 1 cup water
  • 6 oz medium-dry white wine (such as Riesling)
  • 2 oz seltzer water

Steps

    1. Slice ginger into ¼-inch-thick rounds. Zest limes (2 teaspoons).
    2. Combine sugar, water, ginger, and lime zest in medium saucepan on medium-high. Bring to a simmer; cook 2–3 minutes until sugar has dissolved. Let stand 30 minutes to cool. Strain through a sieve, discarding solids. (Makes 1 ⅔ cups.)
    3. Juice 1 lime (1 tablespoon); cut remaining lime into wedges. Combine wine, lime juice, and 1 tablespoon ginger-lime syrup in glass.
    4. Fill glass with ice, top with seltzer, and stir until just combined.
    5. Garnish with lime wedge, if desired.
    Note: Transfer remaining ginger-lime syrup to airtight storage container and chill up to 3 weeks.
