Ginger and Maple Macadamia Nut Cookies

Ingredients

  • Parchment paper
  • 1 stick unsalted butter (½ cup)
  • 1 cup macadamia nuts
  • ¾ cup sugar
  • 1 ½ teaspoons vanilla extract
  • 1 tablespoon ginger spice paste
  • 1 large egg
  • 2 cups self-rising flour

  • 1 cup powdered sugar
  • 2 tablespoons malt powder
  • 2 tablespoons maple syrup
  • 1 tablespoon water
  • ¼ teaspoon kosher salt

Steps

    1. Prepare cookies. Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Set butter out to soften. Chop macadamia nuts.
    2. Place butter, sugar, and vanilla in large bowl; beat with electric mixer on high until light in color. Beat in ginger paste and egg until blended. Sift flour over butter mixture; fold in macadamia nuts; roll (or scoop) dough into 1-inch balls and arrange on prepared baking sheets (12 balls per sheet, evenly spaced).
    3. Bake 18–20 minutes until slightly golden. Let stand 5 minutes to cool. Transfer cookies to a wire rack to cool completely.
    4. Prepare icing. Combine in small bowl: powdered sugar, malt powder, maple syrup, water, and salt. Evenly spread icing over cooled cookies and serve.
