Ingredients

- Parchment paper
- 1 stick unsalted butter (½ cup)
- 1 cup macadamia nuts
- ¾ cup sugar
- 1 ½ teaspoons vanilla extract
- 1 tablespoon ginger spice paste
- 1 large egg
- 2 cups self-rising flour

- 1 cup powdered sugar
- 2 tablespoons malt powder
- 2 tablespoons maple syrup
- 1 tablespoon water
- ¼ teaspoon kosher salt
Steps
- Prepare cookies. Preheat oven to 350°F. Line 2 baking sheets with parchment paper. Set butter out to soften. Chop macadamia nuts.
- Place butter, sugar, and vanilla in large bowl; beat with electric mixer on high until light in color. Beat in ginger paste and egg until blended. Sift flour over butter mixture; fold in macadamia nuts; roll (or scoop) dough into 1-inch balls and arrange on prepared baking sheets (12 balls per sheet, evenly spaced).
- Bake 18–20 minutes until slightly golden. Let stand 5 minutes to cool. Transfer cookies to a wire rack to cool completely.
- Prepare icing. Combine in small bowl: powdered sugar, malt powder, maple syrup, water, and salt. Evenly spread icing over cooled cookies and serve.
