Garlic-Herb Tomatoes

Ingredients

  • 3 cloves garlic
  • 1 tablespoon fresh basil
  • 4 medium tomatoes
  • ½ cup crumbled feta cheese

Steps

    1. Preheat oven to 400°F. Chop garlic and basil finely. Quarter tomatoes; place on baking sheet and top with garlic. Bake 10–12 minutes until tomatoes have softened.
    2. Place tomatoes in serving bowl; top with basil and cheese.
Other Preparation Methods
    • Sauté: Preheat large sauté pan on medium-high. Cut 2 tomatoes into bite-size pieces and place in pan. Cook and stir 3–4 minutes or until tomatoes begin to break down. Season with basil, salt, and pepper.
    • Grill: Add cubes of tomato to skewers with mushrooms and onions; grill 3–4 minutes for a fresh veggie kabob.
