Fruit and Nut Muesli over Yogurt with Blueberries

Ingredients

  • Nonstick aluminum foil
  • 1 cup old-fashioned (rolled) oats
  • ½ cup nut-like cereal nuggets
  • ½ cup sliced almonds
  • ¼ cup unsweetened shredded coconut
  • 2 tablespoons flax seeds
  • 1 tablespoon canola oil
  • 2 tablespoons honey
  • 2 teaspoons pure vanilla extract
  • 1 cup dried apple chips
  • 6 cups plain non-fat Greek yogurt
  • 1 ½ cups fresh blueberries

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Combine oats, cereal, almonds, coconut, and flax seeds. Whisk together oil, vanilla, and honey; pour over oat mixture and toss to coat evenly.
    2. Spread mixture out in single layer on baking sheet. Bake 10–12 minutes, stirring once halfway through, or until toasted and golden. Stir in apple chips; let stand 20 minutes to cool. (If making ahead of time, place muesli in airtight container until ready to serve.)
    3. Assemble by placing 1 cup yogurt in each serving bowl. Top with 1 serving (½ cup + 2 tablespoons) muesli and ¼ cup blueberries. Serve.
    TIP: You can easily double the recipe for the muesli. The muesli can be enjoyed by itself as a snack, served over peaches or pears for a little crunch, or stirred into applesauce.
