Ingredients
- Nonstick aluminum foil
- 1 cup old-fashioned (rolled) oats
- ½ cup nut-like cereal nuggets
- ½ cup sliced almonds
- ¼ cup unsweetened shredded coconut
- 2 tablespoons flax seeds
- 1 tablespoon canola oil
- 2 tablespoons honey
- 2 teaspoons pure vanilla extract
- 1 cup dried apple chips
- 6 cups plain non-fat Greek yogurt
- 1 ½ cups fresh blueberries
Steps
- Preheat oven to 400°F. Line baking sheet with foil. Combine oats, cereal, almonds, coconut, and flax seeds. Whisk together oil, vanilla, and honey; pour over oat mixture and toss to coat evenly.
- Spread mixture out in single layer on baking sheet. Bake 10–12 minutes, stirring once halfway through, or until toasted and golden. Stir in apple chips; let stand 20 minutes to cool. (If making ahead of time, place muesli in airtight container until ready to serve.)
- Assemble by placing 1 cup yogurt in each serving bowl. Top with 1 serving (½ cup + 2 tablespoons) muesli and ¼ cup blueberries. Serve.
