    Ingredients

    • 1 medium green bell pepper
    • 1 medium yellow onion
    • 2 tablespoons canola oil
    • ½ teaspoon kosher salt
    • ¼ teaspoon pepper
    • 4 links kielbasa (or Italian) sausage (about 16 oz)
    • 2 cups frozen crinkle-cut french fries (about 8 oz)
    • 4 hoagie rolls
    • ¾ cup chunky cinnamon applesauce
    • 8 slices Havarti (or provolone) cheese
    • 4 tablespoons horseradish sauce, divided

    Steps

      1. Preheat oven to 425°F. Preheat grill (or grill pan) on medium-high. Quarter bell pepper and remove core. Cut onion into ¼-inch-thick rings. Coat peppers and onions with oil, salt, and pepper.
      2. Place sausages on grill (wash hands). Cook 8 minutes, turning occasionally. Meanwhile, bake fries following package oven instructions.
      3. Place peppers and onions on grill with sausages. Cook 8–10 minutes, turning occasionally, until onions and peppers are tender and grill-marked and sausages are 160°F.
      4. Chop peppers and onions coarsely. Cut rolls in half lengthwise, leaving ½-inch uncut, then use fingers to hull out some of cut side of bread. Spread applesauce evenly in rolls, then add sausages. Fill each roll evenly with peppers, onions, and fries. Top each with 2 slices cheese, cover, and let melt. Drizzle each with 1 tablespoon horseradish sauce. Serve.
