Ingredients
- 1 (6.35-oz) box falafel mix
- ¾ cup + ⅛ cup water
- 1 seedless cucumber
- 8 oz Deli tabbouleh salad
- Cooking spray
- 3 whole wheat pita flatbreads
- 12 tablespoons Greek-style ranch dressing
- 1 (8-oz) container original hummus
Steps
- Combine falafel mix and water in large bowl; cover and let stand 10 minutes. Preheat waffle iron on medium-high.
- Peel cucumber, then cut into small cubes. Combine cucumbers with tabbouleh salad and set aside.
- Shape falafel mix into 6 (2-inch) balls. Coat top and bottom of waffle iron with spray, then place 3 falafel balls on waffle iron (leaving room for mixture to spread once pressed); cook 4–6 minutes or until crispy and heated through. Repeat with remaining falafel balls.
- Coat top and bottom of waffle iron with spray, then press pitas in iron 1 minute until warm. Cut pitas in half, then top each with 2 tablespoons dressing and 1 falafel waffle; fold pitas over like a sandwich. Top pitas evenly with with hummus and cucumber tabbouleh salad.
