    Ingredients

    • 1 (20 oz) bag frozen sweet potato fries
    • 3 oz reduced-sodium sliced ham
    • 1 oz reduced-fat cheddar cheese
    • Cooking spray
    • 1 ½ cups egg substitute (or egg whites), divided
    • ¾ cup diced fresh tri-pepper mix

    Steps

      1. Preheat oven to 425°F. Arrange fries on baking sheet; bake 10 minutes. Chop ham; shred cheese.
      2. Coat 12-cup muffin pan with spray. Place 6 fries (about ¼ cup) in each muffin cup, pressing firmly to cover bottom and create a well in center. Pour 2 tablespoons egg into each cup, then sprinkle evenly with ham and peppers.
      3. Bake 12–15 minutes until eggs are 165°F. Top each muffin evenly with cheese and let stand until cheese has melted. Serve.
