Ingredients
- 8 oz hickory smoked bacon
- Cooking spray
- 10 oz fresh spinach
- 6 oz shredded cheddar cheese
- 12 large GreenWise eggs
- ½ teaspoon pepper (optional)
Steps
- Preheat oven to 400°F. Bake bacon following package instructions; let stand to cool. Preheat large sauté pan on medium-high 2–3 minutes. Coat pan with spray; add spinach. Sauté 1–2 minutes until just wilted. Remove from heat and drain any liquid.
- Reduce oven to 375°F. Coat 12-cup muffin pan with spray. Chop bacon, then divide bacon, spinach, and cheese evenly among muffin cups. Whisk eggs in medium mixing bowl. Pour ¼ cup eggs into each muffin cup. Season with pepper, if using.
- Bake 13–15 minutes until eggs are set and 165°F. Let stand 5 minutes to cool. Serve.
