Easy Buffalo Chili

Ingredients

  • 1 cup diced yellow onions
  • 12 oz ground buffalo
  • 1 (15 oz) can reduced-sodium pinto beans
  • 1 (15.5 oz) can chili starter (or chili with beans)
  • 1 cup mild fresh salsa
  • Chili toppings such as cheese, onions, and sour cream (optional)

Steps

    1. Preheat large saucepan on medium-high 2–3 minutes. Place onions and meat in pan; cook 3–4 minutes, stirring to crumble meat, until no pink remains.
    2. Reduce heat to low; drain and rinse beans. Stir in chili starter, beans, and salsa; simmer 10–12 minutes until thoroughly heated and meat is 160°F. Serve with your choice of toppings, if using.
Other Preparation Methods
    • Grill: Preheat grill on medium-high. Combine 24 oz ground buffalo, ½ cup thick salsa, and ½ cup shredded cheddar cheese; shape into 12 patties (wash hands). Grill patties 3–4 minutes on each side until 160°F. Serve on slider buns with your favorite toppings.
    • Bake: Preheat oven to 400°F. Combine 12 oz ground buffalo with ¼ cup chopped onions, 1 teaspoon smokehouse maple seasoning, and ½ cup each barbecue sauce and panko bread crumbs; shape into 12 meatballs (wash hands). Place on foil-lined baking sheet; bake 17–18 minutes until 160°F.
