    Instructions

    Ingredients

    • 3 fresh red (or white) dragon fruits
    • 2 tablespoons honey
    • 2 (5.3 oz) containers low-fat strawberry Greek yogurt
    • 1 (13.66 oz) can coconut milk
    • 2 (12 ct, 2.5–3 oz) ice pop molds with sticks

    Steps

      1. Halve dragon fruits and scoop out flesh (3 cups); place in food processor bowl and process until puréed, then stir in honey.
      2. Combine yogurt and coconut milk; whisk until well blended. Pour (or spoon) the 2 mixtures alternately into ice pop molds, leaving ¼ inch clearance for the stick.
      3. Swirl mixtures slightly using skewer (or thin-bladed knife) in an up-and-down motion. Insert ice pop sticks; freeze 3 hours or until completely firm. Serve.
