  • 3 large eggs, separated
  • 2 cups all-purpose flour
  • ½ cup Dutch cocoa powder
  • ¼ cup coconut sugar
  • 2 teaspoons baking powder
  • 1 teaspoon baking soda
  • 1 teaspoon kosher salt
  • 1 cup whole milk
  • 1 cup buttermilk
  • ½ cup unsalted butter, melted
  • 1 teaspoon vanilla extract
  • 4 cups water
  • ½ cup bittersweet chocolate morsels (about 3 oz)

... For the Orange Syrup
  • 1 cup sugar
  • ½ cup water
  • ¾ cup orange juice
  • 1 tablespoon cornstarch
  • 2 tablespoons unsalted butter

Steps

    1. Prepare waffles. Separate egg yolks from whites; placing each in separate bowls. Beat egg whites 2 minutes, using hand mixer, until soft peaks form, then set aside. Combine flour, cocoa, sugar, baking powder, baking soda, and salt in large bowl.
    2. Place milk, buttermilk, melted butter, and vanilla in bowl with egg yolks; whisk until blended. Bring water to a boil in small saucepot on low. Place chocolate morsels into a medium bowl, then place bowl on top of pot with simmering water. Melt chocolate, stirring occasionally, and remove from heat.
    3. Add buttermilk mixture to flour mixture, mixing only until combined. Fold whipped egg whites and melted chocolate, a little at a time, alternating each, into batter (do not over mix).
    4. Heat waffle iron following manufacturers instructions; coat lightly with spray. Place about ⅔ cup batter mixture in waffle iron; cook 4–6 minutes or until crisp on the outside and fluffy on the inside. Cover cooked waffles loosely with foil to keep warm. Repeat with remaining batter.
    5. Meanwhile, prepare orange syrup. Combine sugar and water in a small saucepot; bring to a boil on high, whisking until sugar has dissolved. Reduce heat to medium-low.
    6. Whisk together orange juice and cornstarch, then whisk into sugar mixture. Simmer 8–10 minutes, stirring occasionally, or until mixture thickens. Remove from heat; stir in butter. Serve warm over waffles.
