Ingredients
- 1 ½ cups heavy cream
- 2 teaspoons vanilla extract
- 1 tablespoon port wine
- 16 oz (60%) bittersweet chocolate chips
- 1 cup cocoa powder
Steps
- Combine in small saucepot: heavy cream, vanilla, and wine until blended. Heat to a simmer over medium. Add chocolate chips to bowl and cover with warmed cream mixture. Let stand 3–4 minutes, then slowly stir until blended and smooth. Set aside to cool to room temperature, then chill 30–40 minutes until firm.
- Sift cocoa onto a baking sheet. Form/scoop chilled chocolate mixture into 1-inch balls and roll until smooth. Dredge each truffle in cocoa powder and chill until ready to serve.
