Dairy-Free Chocolate Pudding

Ingredients
  • 2 ripe bananas
  • ½ ripe Hass avocado
  • ¼ cup unsweetened almondmilk
  • 3 tablespoons unsweetened cocoa powder
  • 2 tablespoons pure maple syrup
  • ½ teaspoon vanilla extract
  • 1 cup nondairy whipped topping, divided
  • Cookies or candy-covered pretzels (optional)
Steps
  1. Peel bananas; remove pit and flesh from avocado. Place bananas and avocado flesh in food processor bowl (or blender). Add milk, cocoa powder, syrup, and vanilla; process until smooth. Divide mixture evenly among serving bowls. Cover and chill 30 minutes (or overnight).
  2. Top each pudding with ¼ cup whipped topping. Serve with cookies or pretzels, if using.
