Cuban-Style Red Cabbage Slaw

Ingredients
- 1 large head red cabbage
- 1 clove garlic
- ½ bunch fresh cilantro
- 1 fresh jalapeño pepper
- 1 cup apple cider vinegar
- 2 tablespoons orange juice
- 3 tablespoons honey
- 1 tablespoon dried oregano
- 1 teaspoon kosher salt
- ½ teaspoon pepper
- 1 (10 oz) package matchstick carrots
Steps
- Shred cabbage; chop garlic, cilantro, and jalapeño (removing seeds and membrane, if desired) finely. Combine in large bowl: garlic, vinegar, juice, honey, oregano, salt, and pepper until blended.
- Add cabbage, cilantro, jalapeños, and carrots to bowl and toss to coat. Chill at least 3 hours; serve.
