Creamy Lemon-Dill Coleslaw

Ingredients

  • ¼ cup fresh dill
  • ½ cup reduced-fat mayonnaise
  • ½ cup lemon vinaigrette
  • ½ teaspoon kosher salt
  • ¼ teaspoon pepper
  • 1 small head green cabbage
  • 1 small red bell pepper
  • 1 small yellow bell pepper
  • 1 small red onion
  • 1 cup matchstick carrots

Steps

    1. Chop dill. Combine in large bowl: mayonnaise, vinaigrette, dill, salt, and pepper; whisk until smooth.
    2. Slice cabbage, peppers, and onion thinly and place in bowl with dressing; add carrots. Toss vegetables with dressing until coated.
    3. Cover and chill 30 minutes. Toss and serve.
