Cranberry-Walnut Butter

Ingredients

  • ¾ cup salted butter, softened
  • 1 cup fresh cranberries
  • ⅓ cup walnut pieces
  • 2 tablespoons brown sugar
  • 2 tablespoons honey

Steps

    1. Cut butter into small pieces and place in medium bowl to soften. Process cranberries in food processor until chopped; add walnuts and pulse until blended.
    2. Add sugar and honey to butter; beat with electric mixer until fluffy. Add cranberry and nuts to butter mixture; beat until blended (butter will turn pink).
    3. Shape butter into a 6- x 2-inch roll, using plastic wrap to form the roll. Chill 20 minutes or until firm. Serve with warm bread, over waffles, or with sweet potatoes.
