Cranberry-Berry Compote

Ingredients

  • 2 oranges, for zest/juice
  • 1 (12 oz) bag fresh cranberries
  • ½ cup sugar
  • ½ cup strawberry jam
  • 1 teaspoon ground cinnamon
  • 1 quart four-berry smoothie mix (1 ¼ lb mixed fresh berries)
  • Pie, cake, ice cream, or whipped topping (optional for serving)

Steps

    1. Zest 1 orange (1 tablespoon) and juice both oranges (1 cup). Place zest and juice in medium saucepan on medium.
    2. Stir in cranberries, sugar, jam, and cinnamon; cook 5–6 minutes, stirring occasionally, until cranberries start to burst.
    3. Reduce heat to low. Stir in smoothie mix; cook 2–3 more minutes until softened. Remove pan from heat; let stand 10 minutes to cool. Serve over pie, cake, or ice cream, and top with whipped topping if desired. Serve.
    Chef's Tip: A quick and easy-to-prepare topping added to a ready-made dessert makes the dish homemade.
