Cranberry-Apple and Almond Oatmeal Muffin Tops in a Jar

Ingredients
  • For jar:
  • 1-quart mason jar with lid
  • ½ cup whole wheat flour
  • ½ cup brown sugar substitute
  • 1 teaspoon apple pie spice
  • ½ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ¼ cup flax seeds
  • 2 packets apple cinnamon instant oatmeal
  • ½ cup sliced almonds
  • ⅓ cup reduced-sugar dried cranberries (or raisins)
  • 1 cup dried baked apple chips
  • 1 (4 oz) cup unsweetened applesauce

  • For preparation:
  • Nonstick aluminum foil
  • ½ cup egg substitute
Steps
  1. Prepare jar. Wash and dry jar following manufacturer's instructions.
  2. Layer flour, sugar substitute, pie spice, baking soda, salt, flax seeds, oatmeal, almonds, and cranberries in jar. Crush apple chips and add to top of dry ingredients. Seal jar; add applesauce cup and baking instructions.
Baking instructions:
  1. Preheat oven to 350°F. Line baking sheet with foil. Pour jar contents into large bowl; whisk to blend.
  2. Combine applesauce and egg substitute until blended. Add egg mixture to muffin mixture; stir to blend. Let stand 5 minutes before scooping.
  3. Scoop (or form) ¼-cup portions of dough 2 inches apart on baking sheet. Bake 15–20 minutes until edges are golden and centers are 160°F. Let stand 5 minutes. Serve. Store leftovers in airtight container. (Makes about 8 muffin tops.)
