Ingredients
- 1 lb mild pork sausage
- 1 cup trinity mix (diced fresh onions, bell peppers, and celery)
- 1 tablespoon unsalted butter
- 1 teaspoon fresh sage
- Cooking spray
- 12 oz cornbread stuffing mix
- 2 cups reduced-sodium turkey (or chicken) stock
- ½ teaspoon poultry seasoning
- Nonstick aluminum foil
Steps
- Preheat oven to 375°F. Preheat large sauté pan on medium-high 2–3 minutes. Place sausage in pan; cook 5–7 minutes, stirring to crumble meat, until no pink remains. Stir in trinity mix and butter; cook 2–3 more minutes until vegetables soften.
- Meanwhile, chop sage finely. Coat 9-inch square baking dish with cooking spray. Place stuffing mix in large bowl; stir (fold) sausage mixture, stock, and seasoning into stuffing mix.
- Spread mixture evenly in dish and cover with foil. Bake 35–40 minutes until sausage is 165°F. Serve.
