55 minutes total (Active 10 minutes)

Ingredients

  • 1 lb mild pork sausage
  • 1 cup trinity mix (diced fresh onions, bell peppers, and celery)
  • 1 tablespoon unsalted butter
  • 1 teaspoon fresh sage
  • Cooking spray
  • 12 oz cornbread stuffing mix
  • 2 cups reduced-sodium turkey (or chicken) stock
  • ½ teaspoon poultry seasoning
  • Nonstick aluminum foil

Steps

    1. Preheat oven to 375°F. Preheat large sauté pan on medium-high 2–3 minutes. Place sausage in pan; cook 5–7 minutes, stirring to crumble meat, until no pink remains. Stir in trinity mix and butter; cook 2–3 more minutes until vegetables soften.
    2. Meanwhile, chop sage finely. Coat 9-inch square baking dish with cooking spray. Place stuffing mix in large bowl; stir (fold) sausage mixture, stock, and seasoning into stuffing mix.
    3. Spread mixture evenly in dish and cover with foil. Bake 35–40 minutes until sausage is 165°F. Serve.
Chef's Tip: Use prepared stuffing mix and add your favorite stir-ins for a chef-inspired, homemade finish.
