Cookie Butter Fudge

Ingredients

  • Cooking spray
  • 6 European spice cookies
  • 3 cups sugar
  • 12 tablespoons unsalted butter
  • 1 (5 oz) can evaporated milk
  • 1 (7 oz) jar marshmallow crème
  • 1 cup European spice cookie spread
  • 1 teaspoon vanilla extract

Steps

    1. Coat 9-inch square baking dish with spray. Crush cookies coarsely and spread crumbs evenly in bottom of dish.
    2. Combine sugar, butter, and milk in medium saucepan on medium-high; bring mixture to a boil. Reduce heat to medium; cook 4 minutes, stirring continuously to prevent scorching.
    3. Remove pan from heat; whisk in marshmallow crème, cookie spread, and vanilla until melted. Spread mixture evenly in dish; let stand 5 minutes to cool. Chill 30–35 minutes until set.
    4. Invert dish to remove fudge, then cut into 1 ½-inch squares. Serve.
