    Caesar Roasted Potatoes

    Ingredients

    • 1 bag fresh baby potatoes (24–28 oz), halved
    • ½ cup Caesar dressing
    • ¼ cup fresh presliced green onions
    • ½ cup shredded Italian blend cheese
    • ½ cup french-fried onions

    Steps

      1. Preheat oven to 400°F. Halve potatoes, then place in microwave-safe dish and cover; microwave on HIGH for 8–10 minutes or until tender when pierced with a fork.
      2. Transfer potatoes to 13- x 9-inch baking dish; bake 15 minutes.
      3. Remove potatoes from oven; toss with dressing and green onions. Top with cheese and french-fried onions; bake 2–3 more minutes or until cheese is melted. Serve.

    Bacon-Wrapped Green Bean Bundles

    Ingredients

    • Cooking spray
    • 1 (8 oz) package fresh French green beans
    • 2 shallots
    • 3 tablespoons reduced-sodium soy sauce
    • 2 tablespoons brown sugar
    • ½ teaspoon pepper, divided
    • 2 tablespoons unsalted butter
    • 8 slices cooked bacon
    • ¼ teaspoon kosher salt

    Steps

      1. Preheat oven to 400°F. Coat baking sheet with spray. Microwave green beans following package instructions.
      2. Chop shallots (2 tablespoons) and combine with soy sauce, brown sugar, and ¼ teaspoon pepper in medium saucepan on medium-low; simmer and stir 2–3 minutes until mixture is the consistency of syrup. Remove from heat; whisk in butter until blended.
      3. Gather 10–12 beans into a bundle; wrap 1 bacon slice around center and place seam-side down on baking sheet. Repeat with remaining beans and bacon. Coat tops of bundles with spray, then season with salt and remaining ¼ teaspoon pepper. Bake 4–5 minutes until bacon is lightly crisped.
      4. Glaze beans with one-half soy mixture; bake 2 more minutes. Remove beans from oven; brush with remaining half soy mixture and serve.

    Cheesy Cauliflower Puff

    Ingredients

    • 4 oz cream cheese, softened
    • 12-oz fresh cauliflower florets
    • 8 oz white cheddar cheese, shredded
    • ½ cup biscuit mix
    • ½ cup part-skim ricotta cheese
    • 3 large eggs, beaten (or ¾ cup egg substitute)
    • ½ cup whole milk
    • ¼ cup fresh pre-sliced green onions
    • ½ teaspoon kosher salt
    • Cooking spray

    Steps

      1. Preheat oven to 400°F. Cut cream cheese into cubes; place in medium bowl to soften.
      2. Microwave cauliflower following package instructions. Let cauliflower stand 3–4 minutes to cool, then chop coarsely.
      3. Shred cheddar cheese and combine with cream cheese. Stir in biscuit mix and ricotta cheese until blended and smooth.
      4. Stir in cauliflower, eggs, milk, onions, and salt until well blended. Coat 2-quart baking dish with spray; transfer mixture into dish. Bake 25–30 minutes or until center is set. Serve.
