Colombian-Style Powdered Beef

Ingredients

  • 4 green onions
  • 1 ½ lb flank steak
  • ½ teaspoon ground cumin
  • 1 tablespoon garlic stir-in paste
  • 1 teaspoon kosher salt
  • 2 tablespoons canola oil, divided
  • Large zip-top bag
  • 2 plum tomatoes
  • 1 small yellow onion
  • 1 green bell pepper
  • ¼ bunch fresh cilantro
  • 2 limes, for juice
  • 2 teaspoons sazón seasoning

Steps

    1. Slice green onions thinly. Place steak, green onions, cumin, garlic, salt, and 1 tablespoon oil in zip-top bag (wash hands); seal and massage to coat. Chill 2 hours (or overnight).
    2. Place steak and marinade in medium saucepan and cover with water. Bring to a simmer and cook 85–95 minutes until meat is fork-tender and 145°F; let stand to cool. Meanwhile, chop tomatoes, yellow onion, bell pepper, and cilantro finely; juice limes (2 tablespoons).
    3. Cut beef into 1-inch pieces, place in bowl of food processor, and pulse until finely chopped. Preheat large sauté pan on medium high 2–3 minutes; place remaining 1 tablespoon oil in pan, then add tomatoes, yellow onions, bell peppers, and seasoning. Cook 5–7 minutes, stirring occasionally, until vegetables soften. Stir in beef and cook 2–3 minutes until heated through. Stir in cilantro and lime juice; serve.
