Ingredients
- 1 medium sweet potato (or ⅓ cup pumpkin puree)
- 1 large orange
- ⅓ cup canned lite coconut milk
- 1 cup ice
- 2 pitted medjool dates
- 1 teaspoon tahini (sesame paste)
- 1 teaspoon honey (or agave nectar)
- ½ teaspoon vanilla extract
- ¼ teaspoon kosher salt
- 1 teaspoon maca powder
Steps
- Place sweet potato in microwave-safe bowl. Cover and microwave on HIGH 8–10 minutes until softened. Let stand 10 minutes or until cool enough to handle, then halve potato and scoop out flesh (⅓ cup). Peel orange and cut flesh into quarters.
- Place all ingredients in blender; blend until smooth. Pour into serving glasses; serve. (Makes about 2 cups.)
