    Ingredients

    • 1 medium sweet potato (or ⅓ cup pumpkin puree)
    • 1 large orange
    • ⅓ cup canned lite coconut milk
    • 1 cup ice
    • 2 pitted medjool dates
    • 1 teaspoon tahini (sesame paste)
    • 1 teaspoon honey (or agave nectar)
    • ½ teaspoon vanilla extract
    • ¼ teaspoon kosher salt
    • 1 teaspoon maca powder

    Steps

      1. Place sweet potato in microwave-safe bowl. Cover and microwave on HIGH 8–10 minutes until softened. Let stand 10 minutes or until cool enough to handle, then halve potato and scoop out flesh (⅓ cup). Peel orange and cut flesh into quarters.
      2. Place all ingredients in blender; blend until smooth. Pour into serving glasses; serve. (Makes about 2 cups.)
      Chef's Tip: Garnish with warm spices such as cinnamon, coriander, or nutmeg for additional flavor.
