Coconut-Jerk Snow Crab

Ingredients

  • 1 cup seafood stock
  • 1 lime, for juice
  • ¼ cup Caribbean jerk marinade (or sauce)
  • 1 (14 oz) can coconut milk
  • 4 snow crab clusters (1 ½–2 lb total)

Steps

    1. Place stock in large stockpot. Place steamer basket (or ring) in pot. Cover and bring to a boil on high. Juice lime (1 tablespoon); combine with marinade and milk.
    2. Place crab in steamer basket. Pour coconut mixture over crab and cover; steam 4–5 minutes until meat is 145°F. Serve with steaming liquid.
Other Preparation Methods
    • Boil: Add 3 tablespoons kosher salt and 1 tablespoon crab boil seasoning to 2 ½ quarts boiling water. Add 2–3 lb snow crab clusters to pot; cook 3–4 minutes until 145°F. Drain and serve with melted butter.
    • Microwave: Wrap 4 snow crab clusters individually in damp paper towels. Microwave individually on HIGH 45 seconds–1 minute until 145°F. Let stand 1 minute. Serve with melted butter.
