Ingredients

- 1 lemon, for juice
- ⅓ cup honey (or ½ cup granulated sugar)
- 1 tablespoon ground cinnamon
- 4 crisp, sweet apples
- 3 cups all-purpose flour
- 2 cups granulated sugar
- 1 cup vegetable oil
- 4 large eggs
- ⅓ cup orange juice
- 1 tablespoon baking powder
- 1 tablespoon vanilla extract
- 2 tablespoons powdered sugar
Steps
- Place oven rack in lower third of oven; preheat oven to 350°F. Coat 10-inch Bundt (or angel food) cake pan with spray and set aside. Juice lemon (2 tablespoons); combine lemon juice, honey, and cinnamon in medium bowl. Peel, halve, and core apples, then slice thinly (4 cups); stir into honey mixture.
- Combine flour, sugar, oil, eggs, orange juice, baking powder, and vanilla in second medium bowl. Blend with electric mixer on MEDIUM 1 minute, then increase speed to MEDIUM-HIGH and blend 2 more minutes until well combined.
- Pour one-third batter into prepared pan and smooth. Arrange one-half apple slices on top of batter (do not let apple slices touch sides of pan; they will stick). Cover apple layer with one-third batter and smooth. Layer with remaining half apples and top with remaining third batter. Drizzle any juice left from apple mixture over top of batter.
- Place cake pan on baking sheet; bake 60–70 minutes until toothpick inserted in center of cake comes out with moist crumbs. Remove from oven; place pan on cooling rack and let stand 10 minutes. Release cake from sides of pan with small, thin knife. Remove cake from pan and cool completely on rack (about 1 hour). Dust with powdered sugar. Serve.
