Cilantro-Lime and Black Bean Rice

Ingredients

  • 3 tablespoons extra-virgin olive oil
  • 1 cup long-grain white rice
  • 2 cups water
  • 1 bay leaf
  • 1 teaspoon kosher salt
  • ½ cup fresh cilantro
  • 1 (15.25 oz) can black beans
  • 2 limes, for zest/juice

Steps

    1. Heat oil in medium saucepan on medium-high 2–3 minutes. Add rice; cook and stir 1 minute until rice is lightly toasted.
    2. Stir in water, bay leaf, and salt; bring to a boil. Reduce heat to low; cover and cook 20–25 minutes (do not remove lid) until liquid is absorbed and rice is tender. Drain and rinse beans.
    3. Remove bay leaf. Stir beans into rice and cook 2 more minutes, stirring occasionally, until beans are hot. Chop cilantro coarsely. Zest lime (1 teaspoon) and juice (2 tablespoons). Stir cilantro and lime zest and juice into rice. Serve.
