Chorizo-Gouda Stuffed Peppers

Ingredients
  • 4 oz cream cheese, softened
  • 4 oz goat cheese (or cream cheese), softened
  • 3 tablespoons fresh chives, coarsely chopped
  • 1 (8-oz) bag mini sweet peppers, halved
  • 4 oz Gouda (or pepper Jack) cheese
  • 2 links cured chorizo (about 3 oz)*
  • ¼ cup prediced red onions
  • ½ cup reduced-fat mayonnaise
  • 2 tablespoons chipotle pepper sauce
  • *Note: Pepperoni is a good substitute for chorizo.
Steps
  1. Cut cream cheese and goat cheese into chunks to soften. Chop chives. Halve peppers and shred cheese (about 1 cup).
  2. Preheat oven to 400°F. Cut chorizo into small chunks and place in food processor bowl; pulse until finely chopped. Add remaining ingredients (except peppers); pulse until blended.
  3. Spoon cheese mixture (about 1 tablespoon) into each pepper half; place on baking sheet and bake 10–12 minutes or until cheese is hot and bubbly. Serve.
