Chocolate-Oatmeal Bake

Ingredients
  • Cooking spray
  • 1 medium banana
  • 2 cups old-fashioned rolled oats
  • 1 teaspoon baking powder
  • ¼ cup unsweetened cocoa powder
  • ½ teaspoon kosher salt
  • 1 tablespoon flaxseed meal
  • ¼ cup maple syrup
  • 1 tablespoon canola oil
  • 2 cups vanilla almond milk
  • ¼ cup dark (or bittersweet) chocolate morsels
  • 2 cups fresh raspberries
Steps
  1. Preheat oven to 375°F. Coat 9-inch square baking dish with spray. Mash banana in large bowl; add oats, baking powder, cocoa powder, salt, flaxseed meal, maple syrup, oil, almond milk, and chocolate morsels; stir to combine.
  2. Spread mixture into prepared baking dish; bake 28–35 minutes until center is set. Let stand to cool. Top with raspberries and serve.
