Ingredients
- 1 large yellow onion
- 2 medium red (or green) bell peppers
- ½ bunch fresh cilantro, divided
- 2 large sweet potatoes
- 1 (12.95 oz) package vegan chipotle flavored sausage links
- 2 tablespoons water, divided
- 1 tablespoon + 2 teaspoons canola oil
- 1 ¼ cups egg substitute (or vegan eggs)
- ½ cup sliced fresh green onions, divided
- 2 tablespoons chipotle vegan mayonnaise
- 1 cup diced fresh tomatoes
Steps
- Chop onion (1 cup), bell peppers (2 cups), and cilantro (½ cup) coarsely. Peel potatoes and cut into 1-inch cubes (3 cups). Slice sausage links.
- Place 1 tablespoon water and potatoes in microwave-safe bowl; cover and microwave on HIGH 7 minutes or until tender when pierced with a fork; drain. Preheat large sauté pan on medium-high 2–3 minutes. Place oil, yellow onions, and peppers in pan; cook 6–7 minutes, stirring occasionally, until lightly browned. Add potatoes and cook 4 minutes, stirring occasionally.
- Meanwhile, cook eggs in separate pan following package instructions.
- Add sausages and ¼ cup each green onions and cilantro to potato mixture; cook 2–3 minutes, stirring occasionally, until potatoes are tender and sausages are 165°F. Combine mayonnaise and remaining 1 tablespoon water.
- Divide potato mixture evenly among serving bowls; top with eggs. Drizzle with mayonnaise, sprinkle with remaining ¼ cup each cilantro and green onions, and top with tomatoes; serve.
