Ingredients
- 2 large sweet potatoes
- 1 chipotle pepper in adobo + 2 tablespoons sauce
- 1 bone-in pork butt roast (about 3 lb)
- 1 teaspoon ground cumin
- 1 teaspoon pumpkin pie spice
- 2 teaspoons kosher salt, divided
- 1 teaspoon pepper, divided
- 1 teaspoon + 3 tablespoons chili powder
- 2 tablespoons brown sugar, divided
- 2 tablespoons vegetable oil
- 1 (10 oz) bag frozen seasoning blend (diced onions, celery, bell peppers, and parsley)
- 1 tablespoon chunky garlic stir-in paste
- 2 (14.5 oz) cans diced fire-roasted tomatoes
- 12 oz dark beer (or beef broth)
- 1 cup apple cider (or apple juice)
- 1 ½ cups crushed tomatoes (about 14 oz)
- 1 (15 oz) can pumpkin puree
- 2 cans red kidney beans (15–16 oz each)
Steps
- Peel potatoes, then cut potatoes into 1-inch cubes. Chop chipotle pepper; spoon out 2 tablespoons sauce from can. Cut pork into 2-inch cubes, discarding bone. Combine cumin, pumpkin pie spice, 1 teaspoon kosher salt, ½ teaspoon pepper, 1 teaspoon chili powder, and 1 tablespoon brown sugar; coat pork with seasoning mixture (wash hands).
- Preheat multicooker on SAUTÉ until hot. Place oil in pot and add pork, in batches if needed. Cook 3 minutes, turning occasionally, until browned. Add potatoes, frozen seasoning blend, garlic paste, chipotle pepper, and adobo sauce to pot, cook and stir 2 minutes.
- Drain diced tomatoes. Add diced tomatoes, beer, cider, pumpkin puree, crushed tomatoes, and remaining 3 tablespoons chili powder, 1 teaspoon salt, and ½ teaspoon pepper to pot; stir to combine. Seal following manufacturer's instructions; cook on HIGH 45 minutes or until pork is 190°F and fall-apart tender.
- Drain beans. Release steam following manufacturer's instructions. Set multicooker to SAUTÉ and add beans to pot; cook and stir 2 minutes to heat beans and break up pork pieces. Serve with your favorite chili toppings.
