Chipotle-Mango Sausage Quesadilla

Ingredients
  • 8 oz smoked Gouda cheese, shredded
  • ½ fresh mango, thinly sliced
  • 4 oz mini peppers, thinly sliced
  • 4 links apple Gouda chicken sausage, sliced
  • 6 medium flour tortillas (8–10 inch)
  • 1 teaspoon chipotle roasted garlic seasoning
  • 3 tablespoons canola oil, divided
  • 3 tablespoons unsalted butter, divided
  • ½ cup avocado cilantro dressing
Steps
  1. Shred cheese (2 cups). Peel and slice mango. Slice peppers (1 cup); cut sausage into ¼-inch thick slices. Place ⅓ cup cheese on one-half of each tortilla; top evenly with sausage, mango, and peppers. Sprinkle with seasoning; fold tortillas in half.
  2. Preheat large, nonstick sauté pan on medium 2–3 minutes. Place 1 tablespoon each oil and butter in pan. Add two quesadillas to pan; cook 1–2 minutes on each side or until hot and crispy. Repeat with remaining oil and butter to cook all quesadillas. Cut quesadillas into wedges. Serve with dressing for dipping.
