Ingredients
- 2 limes
- 3 boneless, skinless chicken breasts (about 1 ½ lb)
- 16 (12-inch) wooden skewers
- 8 jalapeño peppers
- ¼ cup honey
- ¼ cup tomato paste
- 2 tablespoons apple cider vinegar
- 2 teaspoons salt-free southwestern chipotle seasoning
- ½ teaspoon minced garlic
Steps
- Preheat grill on medium-high. Cut limes into quarters. Slice chicken into very thin strips; thread accordion-style onto skewers. Place skewers and jalapeños on large plate.
- Whisk remaining ingredients until blended. Brush sauce over skewers and jalapeños (discard any remaining sauce).
- Place chicken skewers on grill; grill 8–10 minutes, turning often, and until chicken is 165°F. Add jalapeños to grill during last 2–3 minutes of chicken grill time; grill until peppers are blistered. Squeeze limes over chicken and jalapeños. Serve.
