Chickpea Cookie Dough Bites

Ingredients
  • Parchment paper
  • 1 (15 oz) can no-salt-added (or reduced-sodium) chickpeas
  • ⅓ cup almond butter
  • ¼ cup oat (or almond) flour
  • 3 tablespoons flax meal
  • 2 teaspoons vanilla extract
  • ¼ cup brown sugar substitute
  • ½ teaspoon kosher salt
  • ¼ cup mini semisweet chocolate morsels
Steps
  1. Line baking sheet with parchment paper. Drain and rinse chickpeas, then place in food processor bowl. Process until smooth, scraping down sides occasionally. Add almond butter, oat flour, flax meal, vanilla extract, brown sugar substitute, and salt; pulse until well blended.
  2. Place mixture in small bowl and stir in chocolate morsels. Scoop (or form) dough into 24 portions, about 1 ½ tablespoons each (dough will be sticky); arrange on baking sheet.
  3. Freeze 30 minutes or until firm. Roll into balls, then serve. Transfer remaining bites to freezer-safe container; store frozen.
