Chicken Tender Fried Rice
Ingredients
- 3 green onions
- 3 Deli fried chicken tenders (6–8 oz total)
- 1 (10 oz) bag frozen cooked rice with vegetables
- 1 tablespoon sesame oil
- 3 tablespoons reduced-sodium stir-fry sauce
- 3 tablespoons egg substitute
Steps
- Slice onions thinly (green parts only). Cut chicken tenders into bite-size pieces. Heat rice blend following package microwave instructions.
- Preheat large sauté pan on medium-high 2–3 minutes. Add sesame oil and rice blend; cook and stir 1 minute to toast rice. Stir in stir-fry sauce.
- Add egg substitute slowly, stirring continuously 1–2 minutes until cooked. Stir in chicken tenders and green onions; cook and stir 1–2 more minutes until chicken is 165°F. Serve.
Sparkling Honeydew–Star Fruit Salad
Ingredients
- 3 cups honeydew chunks
- 3 ripe kiwifruit
- 2 ripe star fruit (carambola)
- 1 cup seedless white grapes
- ¾ cup ginger ale
- 3 tablespoons sweetened, shredded coconut
- 1 tablespoon ginger stir-in paste
- 2 teaspoons black sesame seeds (optional)
Steps
- Cut honeydew into bite-size pieces. Peel kiwifruit and slice. Slice star fruit and halve grapes; place all fruit in salad bowl.
- Whisk ginger ale, coconut, ginger paste, and sesame seeds, if using, until blended. Pour mixture over fruit; let stand 5–10 minutes for flavors to blend. Stir and serve.
