Chicken Tender Fried Rice

Ingredients

  • 3 green onions
  • 3 Deli fried chicken tenders (6–8 oz total)
  • 1 (10 oz) bag frozen cooked rice with vegetables
  • 1 tablespoon sesame oil
  • 3 tablespoons reduced-sodium stir-fry sauce
  • 3 tablespoons egg substitute

Steps

    1. Slice onions thinly (green parts only). Cut chicken tenders into bite-size pieces. Heat rice blend following package microwave instructions.
    2. Preheat large sauté pan on medium-high 2–3 minutes. Add sesame oil and rice blend; cook and stir 1 minute to toast rice. Stir in stir-fry sauce.
    3. Add egg substitute slowly, stirring continuously 1–2 minutes until cooked. Stir in chicken tenders and green onions; cook and stir 1–2 more minutes until chicken is 165°F. Serve.
