Chicken Salad Cups with Blueberry Relish

Ingredients

  • 1 (10-oz) package puff pastry cups
  • 1 cup fresh blueberries
  • 1 teaspoon + 2 tablespoons Greek dressing, divided
  • 2 tablespoons shallots, finely chopped
  • 1 teaspoon fresh rosemary, finely chopped
  • 1 (9-oz) package grilled chicken strips (1 ½ cups), coarsely chopped
  • 1 tablespoon low-fat Greek yogurt

Steps

    1. Preheat oven to 400°F. Cook shells and remove tops following package instructions.
    2. Place in small bowl: blueberries and 1 teaspoon dressing; mash lightly and set aside. Chop shallots and rosemary; chop chicken.
    3. Combine in medium bowl: shallots, rosemary, chicken, yogurt, and remaining 2 tablespoons dressing until blended. Fill shells with salad; top with relish. Serve with tops on the side.
