Chicken Meatball and Hummus Tabbouleh Bowls

Ingredients

  • Nonstick aluminum foil
  • 1 lb mild Italian chicken sausage (or ground chicken)
  • ¾ cup panko bread crumbs
  • 1 seedless cucumber
  • 1 pint grape tomatoes
  • 1 (5 oz) package mixed salad greens
  • ¼ cup lemon vinaigrette
  • 1 cup classic hummus (about 10 oz)
  • 1 cup crumbled feta cheese
  • 1 cup Deli prepared tabbouleh (or quinoa) salad
  • 1 cup spiced, crunchy chickpeas (optional)

Steps

    1. Preheat oven to 400°F. Line baking sheet with foil. Remove sausage from casing (if needed). Combine sausage and bread crumbs in large bowl, then form into 1-inch meatballs and arrange on baking sheet (wash hands). Bake 10–12 minutes until meatballs have browned and are 165°F.
    2. Meanwhile, chop cucumber and halve tomatoes. Toss greens with vinaigrette. Assemble by dividing greens evenly among serving bowls; top with piles of remaining ingredients. Serve.
