Ingredients
- Aluminum foil
- 2 romaine hearts
- 1 lb boneless, skinless chicken breasts (or fillets)
- 2 tablespoons extra-virgin olive oil
- ½ teaspoon garlic powder
- ½ teaspoon dried thyme leaves
- ½ teaspoon kosher salt
- ½ cup Caesar-flavored croutons
- ¼ cup Caesar dressing
- ¼ cup shredded Parmesan cheese
Steps
- Preheat oven to 400°F. Line baking sheet with foil. Cut romaine into bite-size piece (about 6 cups); rinse and dry well.
- Place chicken on baking sheet and coat with oil, garlic powder, thyme, and salt (wash hands). Bake chicken 20–25 minutes until browned and 165°F.
- Toss romaine with dressing, croutons, and Parmesan. Slice chicken and place on salad. Serve.
