Ingredients
- 1 orange, for zest/juice
- 4 cups frozen pitted cherries (about 1 lb)
- 1 tablespoon cornstarch
- ¼ cup water
- ¼ cup light margarine blend
- ½ cup old-fashioned oats
- ½ cup sliced almonds
- ¼ cup almond flour
- ¼ cup brown sugar substitute
- 1 ½ teaspoons ground cinnamon
- ¼ teaspoon kosher salt
- 2 ½ cups vanilla frozen yogurt
Steps
- Preheat oven to 375°F. Zest orange (1 teaspoon), then juice (½ cup). Combine cherries and cornstarch in large bowl; stir to coat. Combine zest, juice, and water; add to cherries and stir to blend. Place mixture in 9-inch square baking dish. Bake 15 minutes or until mixture starts to bubble around edges.
- Meanwhile, cut cold margarine into small pieces. Combine oats, almonds, almond flour, sugar substitute, cinnamon, and salt. Cut margarine into dry mixture (using 2 forks or pastry blender) until crumbly; chill until ready to use.
- Stir cherry mixture, then sprinkle evenly with topping. Bake 15–20 minutes until cherry mixture is bubbly and topping has browned. Let stand 10 minutes to cool. Serve with frozen yogurt.
