Cherry-Almond Crisp with Frozen Yogurt

Ingredients

  • 1 orange, for zest/juice
  • 4 cups frozen pitted cherries (about 1 lb)
  • 1 tablespoon cornstarch
  • ¼ cup water
  • ¼ cup light margarine blend
  • ½ cup old-fashioned oats
  • ½ cup sliced almonds
  • ¼ cup almond flour
  • ¼ cup brown sugar substitute
  • 1 ½ teaspoons ground cinnamon
  • ¼ teaspoon kosher salt
  • 2 ½ cups vanilla frozen yogurt

Steps

    1. Preheat oven to 375°F. Zest orange (1 teaspoon), then juice (½ cup). Combine cherries and cornstarch in large bowl; stir to coat. Combine zest, juice, and water; add to cherries and stir to blend. Place mixture in 9-inch square baking dish. Bake 15 minutes or until mixture starts to bubble around edges.
    2. Meanwhile, cut cold margarine into small pieces. Combine oats, almonds, almond flour, sugar substitute, cinnamon, and salt. Cut margarine into dry mixture (using 2 forks or pastry blender) until crumbly; chill until ready to use.
    3. Stir cherry mixture, then sprinkle evenly with topping. Bake 15–20 minutes until cherry mixture is bubbly and topping has browned. Let stand 10 minutes to cool. Serve with frozen yogurt.
