Ingredients
- 4 slices cooked bacon
- 1 small red onion
- 4 fresh cheddar bacon sausages
- ½ cup pimiento cheese spread
- 12 pickled jalapeño slices
- 4 bakery brioche hot dog buns (or hoagie rolls)
- 1 cup lettuce shreds
Steps
- Preheat grill (or grill pan) on medium-high. Microwave bacon following package instructions. Slice onion thinly (about ½ cup).
- Grill sausages 15–20 minutes, turning occasionally, until grill-marked and 160°F.
- Meanwhile, spread pimiento cheese evenly on insides of buns; add 3 slices jalapeño and 1 slice bacon to each. Place over indirect heat 1–2 minutes until pimiento cheese has melted. Place sausages in buns; top with lettuce and onions. Serve.
