Cheddar Soda Bread Scones

Ingredients
  • Parchment paper
  • 3 oz aged white cheddar cheese
  • 2 cups flour
  • ¼ cup sugar
  • 2 teaspoons baking powder
  • ¼ teaspoon baking soda
  • ½ teaspoon kosher salt
  • ½ cup unsalted butter
  • ½ cup raisins (or dried cranberries)
  • 2 teaspoons caraway seeds (optional)
  • 1 cup buttermilk
Steps
  1. Preheat oven to 425°F. Line baking sheet with parchment. Shred cheese (1 cup). Combine in large bowl: flour, sugar, baking powder, baking soda, and salt. Cut butter into small pieces. Work butter into flour mixture using fingers (or 2 forks) until mixture resembles small crumbs.
  2. Stir in cheese, raisins, and caraway seeds (if using) until combined, then stir in buttermilk until dough forms. Scoop (or spoon) dough onto baking sheet (about ⅓ cup each). Bake 15–20 minutes until tops are golden and centers are set. Let cool 5 minutes on baking sheet before serving. (Makes about 8 scones.)
