Ingredients
- Parchment paper
- 3 oz aged white cheddar cheese
- 2 cups flour
- ¼ cup sugar
- 2 teaspoons baking powder
- ¼ teaspoon baking soda
- ½ teaspoon kosher salt
- ½ cup unsalted butter
- ½ cup raisins (or dried cranberries)
- 2 teaspoons caraway seeds (optional)
- 1 cup buttermilk
Steps
- Preheat oven to 425°F. Line baking sheet with parchment. Shred cheese (1 cup). Combine in large bowl: flour, sugar, baking powder, baking soda, and salt. Cut butter into small pieces. Work butter into flour mixture using fingers (or 2 forks) until mixture resembles small crumbs.
- Stir in cheese, raisins, and caraway seeds (if using) until combined, then stir in buttermilk until dough forms. Scoop (or spoon) dough onto baking sheet (about ⅓ cup each). Bake 15–20 minutes until tops are golden and centers are set. Let cool 5 minutes on baking sheet before serving. (Makes about 8 scones.)
