Cheddar Bacon Sausages with Blue Cheese Coleslaw

Ingredients

  • 4 slices cooked bacon
  • 1 medium tomato
  • 4 fresh cheddar cheese and bacon sausages (about 16 oz)
  • 4 Bakery brioche hotdog buns (or hoagie rolls)
  • 4 oz Deli shredded coleslaw (about ½ cup)
  • ½ cup crumbled blue cheese

Steps

    1. Preheat grill (or grill pan) on medium-high. Microwave bacon following package instructions. Cut tomato into 8 thin slices.
    2. Grill sausages 15–20 minutes, turning occasionally, until grill-marked and 160°F. Toast buns if desired.
    3. Combine coleslaw and blue cheese. Spread mixture evenly in bottoms of buns, then add sausages. Place bacon and tomato slices in buns next to sausages. Serve.
