    Ingredients

    • 1 (20 oz) can pineapple tidbits in juice
    • 1 cup white rice
    • 1 ¼ cups water
    • ¼ bunch green onions
    • 2 tablespoons margarine
    • ⅓ cup tri-pepper mix (diced fresh green, red, and yellow bell peppers)
    • ½ teaspoon dried thyme
    • ¾ teaspoon kosher salt
    • ½ teaspoon pepper
    • 2 tablespoons shredded unsweetened coconut
    • ¼ teaspoon garlic powder

    Steps

      1. Drain pineapple, reserving ¾ cup juice. Cook rice following package instructions using pineapple juice and water. Slice green onions thinly.
      2. Remove rice from heat; stir in green onions, margarine, tri-pepper mix, thyme, salt, pepper, coconut, and garlic powder. Serve.
